Garlic Parmesan Crusted Zucchini & Squash

for 4 servings


  • 1 large zucchini.

  • 1 large squash

  • 2 cups Italian bread crumbs

  • ¾ cup parmesan cheese

  • 1 tablespoon paprika

  • 1 tablespoon garlic powder

  • ½ teaspoon sea salt

  • 1 tablespoon Armanda’s Kuisine Island Spice

  • 1 ½ teaspoons Veggie Seasoning (I use Weber Veggie Grill Seasoning)

  • 2 eggs

Cut off top and bottom of zucchinis and squash. slice zucchinis into ¼ inch slices. Pat dry with a paper towl. Sprinkle both sides with Veggie Seasoning.

  1. In a small bowl, whisk eggs together.

  2. Preheat oven to 450ºF (230ºC).

  3. In a large bowl, mix together Italian bread crumbs, parmesan cheese, paprika, Island spice, garlic powder, and sea salt.

  4. Take a zucchini and Squash slices and dip it in egg wash, then coat it in bread crumb mix, coating all sides and patting mixture onto both side, then place the slice on a large baking sheet. Repeat for all slices.

  5. Bake in oven for 15-20 minutes or until chips are golden brown. Flip halfway through

  6. (OPTION) Top with Shredded Mozzarella cheese,, Grated Parmesan, basil, and parsley flakes

  7. Dip with your favorite marinara sauce. ENJOY!


*If using an air fryer, spray the top of veggies with olive oil, set at 400 degrees, and cook for 8-10 minutes.(depending on your air fryer, the time may be slightly different.
